Couscous Stuffed Pepper

2 Red or Yellow Peppers
1 Package of Couscous
Handful of basil, dill, mint and/or parsley
1/2 cup Pine nuts
1 tbsp. Olive oil
1/2 cup Feta cheese
1 can chickpeas
Slice the top off a red or yellow pepper; Clean out seed and Veins.
Simmer top and bottom in boiling water for 10 minutes (or until tender)-set aside.
Make Couscous according to package instructions.
Toss with chopped basil, dill, mint and/or parsley, toasted pine nuts and olive oil.
Add crumbled feta cheese and canned, drained chickpeas.
Fill pepper with couscous mixture.
