What a great weekend! The weather is perfect and spent plenty of time enjoying these beautiful fall days with friends and family.
Saturday we went to A's best friends house, for a couple's baby shower brunch. He and his wife are expecting their first. We noshed on Pumpkin Waffles, Fruit and Yogurt, mini-bagel sammies, and egg casserole. After the shower we stopped by
O'Niells to enjoy a beer in the sunshine! O'Niells always has a great veggie option called "The Weird Sandwich of the Day"...today was no exception! A sweet potato burrito with blue cheese and green chili! WHAT?!?! Yummo! After those Pumpkin waffles I was ready for a pumpkin beer and that is just what I had...
Sunday we went to lunch at
Weck's, a great breakfast and lunch joint here in Albuquerque. I absolutely love this place from the food to the decor--posters and art deco of old Hollywood icons, diner style! The service is also amazing (which is not something I get to say to often!) My dish of choice is the same everytime, maybe one day I will branch out but for now I will continue to enjoy my Veggie Wrap, an oven fired flat bread stuffed full with shredded lettuce, almonds, cream cheese, cucumbers, sunflower seeds, fresh alfalfa sprouts, tomatoes, carrots and bell peppers. So fresh and delightful even the French Toast can't draw me away!
After lunch we took Gary the Boxer on a nice long walk, did a little grocery shopping and then settled in for Football and ....

Today I spent the day cleaning house and doing laundry. Gary and I enjoyed a long run this morning, savouring the mild temperatures before the cold really sets in! I am interested to see how I handle my first winter in the Rocky Mountains...at least we have the desert too, hopefully it will balance out the frigid temps. For dinner we enjoyed Sweet Potatoes and Salad. I am feeling pretty sly, pulling off Meatless Monday two weeks in a row without a peep from A.....hehe, if he only knew!

1. Preheat oven to 425˚ and wash your Sweet Potatoes. 2. Microwave Sweet Potatoes for about 2 minutes on High. (This will soften the potato and allow you to slice through the potato, not your thumb!) 3. Slice potatoes and place on a roasting pan. 4. Dust with seasoning of choice. Tonight I used Arizona Dust and Sea Salt. 5. Drizzle with Olive Oil. 6. Roast potatoes for 20 minutes. Then flip for about 3 more minutes. ENJOY!
Going to snuggle in with my boys now and watch a movie. Ready to start another great week!
